Cowboy Three-Bean Chili

I am a mason jar nut. I collect vintage mason jars, so it was natural for me to make these as holiday (1997) gifts. The idea came from a friend's daughter. She made these in Vacation Bible School and served it with tortilla chips--it was very tasty. I designed labels for the jars using Print Artist and a rope border...looks really nifty. The last steps; attaching the labels to the jars, topping with tan craft paper, cut into rounds and tied with raffia. Be sure to use jars without any embossing on one side so that the label is smooth.

Directions: In a pint mason jar, layer 3 different kinds of beans--kidney, pinto, white, any kind you like. Decorate jar any way you like.

Cowboy Three-Bean Chili

Ingredients: Prepared bean mixture, rinsed and soaked overnight. 1 clove garlic; crushed, 1 tablespoon vegetable oil, 1 large can chopped tomatoes, 2 teaspoons dried oregano, 1 to 3 teaspoons chili powder, 1 tablespoon vinegar, 1 cube vegetable stock, salt to taste. Cook beans, covered with water, until tender. Using a heavy pan, lightly fry the garlic in the oil over a low heat. Add the tomatoes, cooked beans, oregano, chili powder, vinegar & stock cube; bring to a boil. Continue to season to taste. Reduce the heat, cover & simmer gently for about an hour, stirring occasionally. Add water as necessary.
