Source: Adapted from a recipe off the back of the King Arthur Vital Wheat Gluten bag and posted by Jonie to the Yahoo! Groups, Bread Machine Digest Mailing List
(bread-machine), message number 14704.
Jonie did a great job adapting this recipe. It is truly soft, fluffy, 100% whole wheat bread.
It has become our favorite bread to have with tuna salad sandwiches.
A quote from the original post:
"This bread was incredible!!! Everything I was looking for with no white flour at all --
the texture was very light, this would make great sandwich bread --
and the taste was even better -- my 7 year old loved it!!!"
I couldn't have said it better -- thanks again Jonie!!!
UPDATE: Jonie e-mailed me on August 19, 2001--this bread won
FIRST PLACE at the Westmoreland County (Pennsylvania) fair!!!
100% Whole Wheat Bread
1¼ cups water
2 tablespoons olive oil
¼ cup pure maple syrup
2¾ cups whole wheat flour (Jonie used Hodgson Mill, I used King Arthur)
¼ cup ground flax seeds (3 tablespoons whole = ¼ cup ground)
3 tablespoons vital wheat gluten
1½ teaspoons salt
1½ teaspoons instant yeast
Assemble ingredients in the order specified in your bread machine manual.
Light crust, basic loaf setting. This makes a 1½ pound loaf.
