Jonie did a great job adapting this recipe. It is truly soft, fluffy, 100% whole wheat bread.
It has become our favorite bread to have with tuna salad sandwiches.

FIRST PLACE at the Westmoreland County (Pennsylvania) fair!!!

100% Whole Wheat Bread

1¼ cups water
2 tablespoons olive oil
¼ cup pure maple syrup
2¾ cups whole wheat flour (Jonie used Hodgson Mill, I used King Arthur)
¼ cup ground flax seeds (3 tablespoons whole = ¼ cup ground)
3 tablespoons vital wheat gluten
1½ teaspoons salt
1½ teaspoons instant yeast

Assemble ingredients in the order specified in your bread machine manual.
Light crust, basic loaf setting. This makes a 1½ pound loaf.
